Ingredients


Measurements:

  • chilled unsalted butter icon
    8 oz chilled unsalted butter

    cut into cubes

  • superfine sugar icon
    ½ cup (3½ oz) superfine sugar
  • all-purpose flour icon
    2 cups (10½ oz) all-purpose flour
  • kosher salt icon
    ½ tsp kosher salt
  • demerara sugar icon
    Demerara sugar

    to sprinkle

Instructions

  • 1Carefully assemble the processor with the grey spindle and green S-blade™ in the bowl. Add the butter, sugar, flour and salt and process until the mixture resembles fine crumbs.
  • 2Carefully remove the blade and turn the dough onto the countertop. Bring together into a ball.
  • 3Lightly flour the countertop and roll the dough until approximately ¼-inch thick. Cut into approximately 21 rectangles. Place on two parchment paper lined sheet pans and sprinkle with demerara sugar. Refrigerate for 30 minutes.
  • 4To preheat the oven, insert the wire rack into position 6. Set the oven to Bake, No Fan, 350°F, for 20 minutes and press Start.
  • 5Once preheated, place one of the sheet pans in the oven and bake for 18 minutes, or until golden brown. Repeat with the second sheet pan.
  • 6Allow to cool on the pan for 5 minutes before transferring to a rack to cool completely.
