This is a little bit of fusion magic. Sweet and salty glazed Mongolian beef gets broiled to caramelized perfection then sandwiched between crisp tortillas with melted cheese, green onions and jalapeños. Make them your own with some freshly chopped bell pepper, tomato or a sprinkling of cilantro.
1Place the soy sauce, sugar, water, ginger, garlic and cornstarch in a large bowl and whisk to combine. Add the sesame seeds and beef and toss to coat.
2Cut half the green onions into 2-inch lengths, on the diagonal. Add to the beef mixture and toss to combine. Arrange the beef mixture, in a single layer, in the roasting pan. Thinly slice the remaining green onions, on the diagonal and set aside.
3Insert the wire rack into position 1. Set the oven to Broil, High, for 5 minutes and press Start to preheat.
4Once preheated, place the pan in the oven, reset the time to 6 minutes and press Start. Halfway through broiling, stir and continue broiling.
5The beef should be browned and cooked through. If not, broil a little longer.
6Remove the beef mixture from the oven and allow to rest for 5 minutes. Stir to coat in any pan juices. Meanwhile, continue to the next step.
7Move the wire rack to position 4. Place a 12-inch cast iron skillet in the oven. Adjust the oven to Air fry, Super Convection, 400°F, for 6 minutes, confirm Rotate Remind and press Start to preheat. Meanwhile, continue to the next step.
8Place 2 tortillas on a cutting board and sprinkle with half the cheese. Top with the beef mixture. Scatter with the jalapeños, the reserved green onions and the remaining cheese. Top with the remaining tortillas and brush with 1 tablespoon oil.
9Once preheated, add 1 tablespoon oil to the skillet and swirl to coat the base. Add one of the quesadillas and cook for 6 minutes. When the Rotate Remind signals, rotate the skillet and continue cooking.
10The quesadilla should be crisp and golden underneath. If not, cook it a little longer. Carefully remove the quesadilla from the skillet and transfer to a plate. Repeat with the remaining quesadilla.
