  • old fashioned rolled oats icon
    2½ cups (7 oz) old fashioned rolled oats
  • coconut flakes icon
    ½ cup (1½ oz) coconut flakes
  • shelled pistachios icon
    ½ cup (2½ oz) shelled pistachios
  • pepitas (pumpkin seeds) icon
    ½ cup (2½ oz) pepitas (pumpkin seeds)
  • sea salt icon
    ½ tsp sea salt
  • ground cinnamon icon
    ¼ tsp ground cinnamon
  • coconut oil icon
    ⅓ cup (2¾ oz) coconut oil
  • maple syrup icon
    ⅓ cup (2¾ fl oz) maple syrup
  • light brown sugar icon
    ¼ cup (1¾ oz) light brown sugar
  • dried cranberries icon
    ½ cup (2½ oz) dried cranberries

Instructions

  • 1Insert the wire rack into position 6. Set the oven to Bake, Convection, 310°F, for 25 minutes, confirm Rotate Remind and press Start to preheat. Meanwhile, continue to the next step.
  • 2Place the oats, coconut flakes, pistachios, pepitas, salt and cinnamon in a bowl and stir to combine.
  • 3Place the coconut oil, maple syrup and sugar in a saucepan and bring to a boil, then remove from the heat.
  • 4Line the roasting pan with foil. Pour the hot syrup over the oat mixture and stir to coat. Transfer the mixture to the roasting pan and spread evenly.
  • 5Once preheated, place the pan in the oven and cook for 25 minutes. When the Rotate Remind signals, add the cranberries. Stir to combine, then spread evenly and continue cooking.
  • 6The granola should be golden brown. If not, cook it a little longer.
  • 7Remove from the oven and allow to cool. If you prefer your granola in clusters, cool for 30 minutes without disturbing, then break into chunks. Alternatively, stir with a spoon to break up into finer pieces.
  • 8Serve with yogurt or in large clusters as a snack. Store in an airtight container up to 1 week.
