How to manually texture microfoam milk
Perfectly textured milk is one of the secrets to delicious third wave specialty coffee as it balances the flavor of the espresso, bringing out the nuanced flavors. Creating this texture is simple with the Barista Pro™. Follow our video tutorial as our professional barista demonstrates. Start by pouring fresh, cold milk into the milk jug, with the surface of the milk just below the beginning of the spout. Next, wipe down the steam wand with a clean, damp cloth. With the wand in the vertical position over the drip tray, set the dial to 'Steam' for several seconds to purge any milk residue. Stop the steam and immediately insert the wand into the milk jug, with the wand about ½ an inch below the surface of the milk. Again, set the dial to 'Steam.' Keep the head of the wand just below the surface of the milk as the milk begins to spin into a 'whirlpool.' As the milk starts to expand with air, slowly lower the jug, keeping the wand's head at or just below the milk's surface. When the jug is full and hot to the touch, your textured milk is ready to use.
