Measurements:

  • unsalted butter icon
    4 oz unsalted butter

    at room temperature

  • dark brown sugar icon
    ½ cup (3½ oz) dark brown sugar
  • white sugar icon
    ⅓ cup (2 oz) white sugar
  • large egg icon
    1 large egg

    at room temperature

  • vanilla extract icon
    2 tsp vanilla extract
  • all-purpose flour icon
    ⅔ cup (3½ oz) all-purpose flour
  • baking soda icon
    ½ tsp baking soda
  • salt icon
    ⅛ tsp salt
  • ground cinnamon icon
    2 tsp ground cinnamon
  • ground ginger icon
    ⅛ tsp ground ginger
  • old fashioned rolled oats icon
    1½ cups (4 oz) old fashioned rolled oats
  • raisins icon
    1 cup (5 oz) raisins

Instructions

  • 1Beat the butter and sugar with a stand mixer, on high speed for 2 minutes, or until pale.
  • 2Add the egg and vanilla and beat on medium speed until combined.
  • 3Add the flour, baking soda, salt and spices and mix on medium speed until combined.
  • 4Add the oats and raisins and mix on low speed until just combined.
  • 5Insert the wire rack into position 5. Set the oven to Cookies, Convection, 325°F, for 13 minutes and press Start to preheat. Meanwhile, continue to the next step.
  • 6Line the pizza pan with parchment paper. Measure out 12 x ¼ cups of dough and roll into balls. Evenly space 6 balls on the pan and press to flatten slightly.
  • 7Once preheated, place the pan in the oven and cook for 13 minutes.
  • 8The cookies should be lightly browned. If not, cook them a little longer.
  • 9Stand the cookies on the pan for 5 minutes then transfer to a wire rack to cool completely. Repeat with the remaining balls.
  • 10Store in an airtight container for up to 5 days.
