Measurements:

  • Yukon Gold potato icon
    2 x 10½ oz Yukon Gold potatoes
  • olive oil icon
    4 tsp olive oil

  • small broccoli floret icon
    4 oz small broccoli florets
  • kosher salt icon
    ½ tsp kosher salt
  • bacon slice icon
    3½ oz bacon slices

    ¼ cup (2 fl oz) water
  • milk icon
    ½ cup (4 fl oz) milk
  • Velveeta cheese icon
    3½ oz Velveeta cheese

    chopped

  • unsalted butter icon
    1 oz unsalted butter

    ⅓ cup (1½ oz) shredded cheddar cheese
  • sour cream icon
    ¼ cup (2 oz) sour cream
  • green onion icon
    1 green onion

    thinly sliced

Instructions

  • 1Insert the oven rack into position 3 Down. Set the oven to Air Fry, Super Convection, 400°F, for 1 hour and press Start to preheat. Meanwhile, continue to the next step.
  • 2Line the roasting pan with foil and place the broiling rack in the pan. Place the potatoes on the rack and pierce each potato 6 times with a fork. Brush the potatoes with 2 teaspoons oil.
  • 3Once preheated, place the potatoes in the oven and air fry for 1 hour. When the oven signals, rotate the pan.
  • 4The potatoes should be tender when tested with the tip of a small knife. If not, press A Bit More. Remove the potatoes from the oven and allow to stand in a warm place.
    Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.
  • 5Adjust the oven to Air Fry, Super Convection, 400°F, for 13 minutes and press Start. Meanwhile, continue to the next step.
  • 6Place the broccoli in a bowl and add the remaining 2 teaspoons oil, and salt and toss to combine. Set aside.
  • 7Place the bacon and water in a roasting pan and spread out evenly. Once preheated, place the pan in the oven and air fry for 13 minutes. When the oven signals, stir the bacon, add the broccoli and continue cooking. Meanwhile, continue to the next step.
  • 8Place the milk in a small saucepan over medium heat and bring to a simmer. Add the Velveeta and whisk until melted. Add two-thirds of the bacon and broccoli and stir to combine. Remove from the heat.
  • 9Adjust the oven to Air Fry, Super Convection, 400°F, for 5 minutes and press Start. Meanwhile, continue to the next step.
  • 10Using a small knife, cut a slit the length of the potato along the center and gently squeeze open. Divide the butter between the potatoes and using a fork gently fluff the flesh. Spoon the Velveeta filling into each potato and sprinkle with the cheddar cheese. Top with the remaining broccoli and bacon, reserve some of the bacon to serve.
  • 11When the oven signals, return the potatoes to the oven and air fry for 5 minutes. Ignore the Turn/Shake signal halfway through cooking.
  • 12The cheese should be melted. If not, press A Bit More.
    Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.
  • 13Top the potatoes with sour cream, the remaining bacon and green onion and serve.
