Measurements:

  • russet potato icon
    3 lb russet potatoes

    washed, peeled

  • heavy cream icon
    1 cup (8 fl oz) heavy cream
  • kosher salt icon
    1 tsp kosher salt
  • freshly ground black pepper icon
    ½ tsp freshly ground black pepper
  • fresh thyme leaves icon
    2 tsp fresh thyme leaves
  • clove garlic icon
    1 clove garlic

    minced

  • finely grated Gruyere cheese icon
    ½ cup (2 oz) finely grated Gruyere cheese
  • cracked black pepper icon
    Cracked black pepper

Instructions

  • 1Using a mandoline, cut the potatoes into 1/8-inch thick slices and place in a bowl.
  • 2Add the cream, salt, pepper, thyme and garlic to the potatoes and mix to coat.
  • 3Layer the potatoes in a 8-inch square baking dish. Pour over the cream that is left in the bowl and sprinkle with the cheese. Cover with a sheet of parchment paper then foil. The parchment paper stops the cheese sticking to the foil.
  • 4Insert the wire rack into position 6. Set the oven to Bake, Convection, 350°F, for 1 hour 15 minutes, confirm Rotate Remind and press Start to preheat.
  • 5Once preheated, place the dish in the oven and cook for 1 hour 15 minutes. When the Rotate Remind signals, rotate the dish, remove the foil and parchment paper and continue cooking. 
  • 6The gratin should be golden brown. If not, cook it a little longer.
  • 7Sprinkle with cracked pepper and chives and serve.
