Air-Fried Spiced Lamb Meatballs with Tomato and Feta
Classic meatballs in tomato sauce have been upgraded with Middle Eastern inspired flavors. Deliciously tender and moist, these lamb meatballs are air-fried.
Heat the oil in a saucepan over medium heat. Add the onion and cook, stirring for 3 minutes, or until just soft. Add the garlic and cook, for 1 minute, or until fragrant. Add the spices and cook for a further 1 minute.
Add the tomatoes, sugar and salt and stir. Bring to a boil, reduce the heat to low and simmer, stirring occasionally for 20 minutes, or until thickened. Meanwhile, continue to the next step.
Place all the meatball ingredients in a bowl and mix well.
For easy cleaning and to avoid burning, line the roasting pan with foil and place the broiling rack in the pan. Roll heaped tablespoons of the meatball mixture into balls. Place them on the rack, evenly spaced apart.
Insert the wire rack into position 4. Set the oven to Air Fry, Super Convection, 435°F, for 15 minutes and press Start to preheat.
Once preheated, place the pan in the oven and cook for 15 minutes.
The meatballs should be browned and cooked through. If not, cook a little longer.
Spoon the tomato sauce into a serving dish and place the meatballs in the sauce. Serve sprinkled with the feta and cilantro and couscous on the side.
