For the wedges

  • sweet potato icon
    1½ lb sweet potatoes

    skin on, scrubbed

  • garlic powder icon
    ½ tsp garlic powder
  • onion powder icon
    ½ tsp onion powder
  • smoked paprika icon
    1 tsp smoked paprika
  • ground cumin icon
    ¼ tsp ground cumin
  • ground coriander icon
    ¼ tsp ground coriander
  • cayenne pepper (optional) icon
    ¼ tsp cayenne pepper (optional)
  • kosher salt icon
    1 tsp kosher salt

    plus extra to serve

  • freshly ground black pepper icon
    ¼ tsp freshly ground black pepper
  • olive oil icon
    2 tbsp olive oil

For the lime aioli

  • mayonnaise icon
    ½ cup (3½ oz) mayonnaise
  • clove garlic icon
    ½ clove garlic

    minced

  • fresh lime juice icon
    1 tbsp fresh lime juice
  • grated lime zest icon
    Grated lime zest

Instructions

  • 1Cut the potatoes into 3-inch long and 1-inch thick wedges.
  • 2Place the potatoes in a pot, cover with cold water, bring to a boil then drain immediately. This removes excess starch.
  • 3Spread onto paper towels and stand for 20 minutes to dry out and cool. Meanwhile, make the lime aioli.
  • 4Whisk the mayonnaise, garlic and lime juice, cover and refrigerate.
  • 5Set the oven to Air Fry, Super Convection, 400°F, for 25 minutes and press Start to preheat. Meanwhile, continue to the next step.
  • 6Combine the garlic powder, onion powder, paprika, cumin, coriander, cayenne, salt and pepper in a bowl.
  • 7Toss the potatoes in the oil and the spice mix. Place in a single layer in the air fry basket, evenly spaced apart for even air flow.
  • 8Once preheated, place the basket in rack position 3 and cook for 25 minutes.
  • 9The sweet potato should be well browned. If not, cook a little longer.
  • 10Sprinkle the aioli with lime zest and the wedges with salt.
