1Place ¼ teaspoon oil in a small bowl. Shape the dough into a ball and add to the bowl. Turn to coat in the oil, cover with plastic wrap. Allow the dough to stand in a warm place for 1 hour to come to room temperature.
2Lightly dust the countertop with flour. Turn the dough onto the countertop and lightly flour the dough and rolling pin. Roll the dough into a 9-inch circle.
3Grease the roasting pan with 3 tablespoons oil. Transfer the dough to the pan and stretch to the edges.
4Spread the pizza sauce over the dough, leaving a ½-inch border. Top with half the mozzarella, then the pepperoni, remaining mozzarella, and parmesan.
5Insert the oven rack into position 3 Down. Set the oven to Air Fry, Super Convection, 380°F, for 20 minutes and press Start to preheat.
6Once preheated, place the pan in the oven and air fry for 20 minutes.
When the oven signals, rotate the pan.
7The cheese should be melted and the dough lightly browned. If not, press A Bit More.
Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.
8Transfer the pizza to a cutting board. Slice and serve.
