Ingredients


Measurements:

  • orange icon
    1 orange

    zest grated and juiced, plus extra zest to serve

  • frozen cranberries  icon
    4 cups (1 lb) frozen cranberries
  • ground cinnamon icon
    ½ tsp ground cinnamon
  • ground ginger icon
    ½ tsp ground ginger
  • kosher salt icon
    ¼ tsp kosher salt
  • white sugar icon
    ⅓ cup (2¼ oz) white sugar
  • light brown sugar icon
    ⅔ cup (5 oz) light brown sugar

Instructions

  • 1Insert the wire rack into position 6. Set the oven to Bake, Convection, 350°F, for 40 minutes and press Start to preheat. Meanwhile, continue to the next step.
  • 2Place the zest, juice, cranberries, cinnamon, ginger, salt and sugar in a 8-inch ovenproof dish and stir to combine.
  • 3Once preheated, place the dish in the oven and cook for 40 minutes. After 10 minutes cooking, stir the sauce. After a further 10 minutes, add the brown sugar. After a further 10 minutes, stir again.
  • 4The cranberries should have burst and the base of the dish should be lightly covered with juice. If not, cook the sauce a little longer.
  • 5Remove from the oven and stand for approximately 10 minutes to allow the mixture to cool and thicken slightly.
  • 6Pour the sauce into a serving dish and scatter with zest. The sauce will thicken as it cools.
    Tip: Sauce will keep in an airtight container in the refrigerator for up to 1 week.
